This is seriously the world’s best potato soup. Ever.
Home Made Slow Cooked Potato Soup
18 medium potatoes diced (with skin on!)
2 boxes of broth (veggie or chicken, your pick)
1 whole yellow onion chopped
3 cloves of garlic minced
2 sticks of organic grass fed butter
2 teaspoons of maca root powder
2 teaspoons of salt
Slow cook from bedtime to rise on low.
Add a cup of organic sour cream and mix in
Mash to desired texture (I like big chunks with a slightly thick broth)
Scoop into a serving bowl
Added a spoonful (or 2) of sour cream and chives.
I received RAVE review on this recipe, which I modified from a few I found online. Remember to use organic ingredients when possible, and feel free to substitute anything in ways that please your taste buds (but try this version first :D)
